Recipe For The Week: Pork Chops And Savoury Rice



Delicious dishes are what makes life worth living, so you owe it to yourself once in a while, to try out new recipes that are guaranteed to make your family love you more. The recipe for the week contains more of pork. If you do not eat pork, you can substitute the pork in this recipe with beef and the result will still be mind blowing. If you are still wondering why we chose pork for this week’s recipe, here are some reasons.

Pork has a high protein content (around 20%), and Protein is important for muscle building and for keeping organs healthy. It has a high B1 vitamin content and is a good source of B2, B6, B12 and Niacin. Also, Iron is a mineral often lacking in infants, teenagers and women. The iron in pork is easy for the body to absorb and also aids the absorption of iron from bread and vegetables. It is also a source of zinc and selenium.

As we all know, Pork also contains fat. There are three different types of fat in the meat: within the muscle, between the muscles and beneath the rind. For the best eating experience, lean pork should not be overcooked. The meat is at its most succulent when cooked at a temperature of 60-70°C. During preparation, the fat melts away but the intramuscular fat remains, which ensures succulence. Finally, a typical cut of pork contains almost 75% water. Enjoy this very simple and tasty recipe and let us know how it turned out.

Recipe for Pork Chops and Savoury Rice

Ingredients – Pork Chops

  • 1 pound of pork
  • 1 stalk of rosemary
  • 1/4 bulb of red onions
  • 4 garlic cloves
  • Seasoning cubes
  • 1/2 teaspoon of black pepper
  • Small pieces of ginger
  • 4 pieces of small scotch bonnet peppers
  • 1 tablespoon of lemon juice
  • 1/4 teaspoon of salt
  • 1 tablespoon of butter
  • 1 cooking spoon of vegetable oil
  • 1 teaspoon of sugar (Optional)
  • A handful of chopped yellow bell pepper
  • A handful of chopped spring onions
  • 1 teaspoon of all purpose flour

Savoury Rice

  • 1 cup of rice
  • 1 cup chopped vegetables
  • Seasoning cubes
  • 1 cooking spoon of vegetable oil
  • 1 teaspoon lemon juice
  • 1/4 teaspoon of black pepper
  • Salt to taste

Method of Preparation – Pork Chops

Blend your ginger, 3 pieces of garlic, pepper and seasoning cubes and pour over your chopped pork pieces. Add the rosemary and onions and allow to marinate for at least an hour or longer if you have time. In a pan, heat up the butter and oil and chop your remaining garlic and stir fry on medium heat. Add the marinated pork but not all the marinade at once and allow the pork to brown on both sides. Reduce the heat to allow the pork cook. Add the lemon juice, black pepper, sugar salt and if more seasoning is required, add it here.  Add the rest of the marinade and allow to cook. Add 1/2 cup of water if the pan is getting dry and one teaspoon of all purpose flour to thicken the sauce. Add the yellow bell pepper and spring onions and immediately turn off the heat so the vegetables do not become too soft.

Preparing your Savoury Rice

Wash and bring to boil one cup of rice. Season with the lemon juice, black pepper, salt and seasoning cube. When the rice is soft, add the oil and stir in the chopped vegetables for 1-2 minutes. Serve the rice with the pork chops and a glass of juice.
